Ice cream cakes are so special, aren’t they? They’re big, decadent, and oh-so smooth – the perfect treat for a birthday party on a hot summer day. However, ice cream cakes can be harder to come by, and they usually come in a just few different flavors. So, we’ve come up with our own delicious recipe that’s easy, affordable, and super customizable!
With this ice cream cake recipe, the flavor combinations are endless! Use any flavor of ice cream you want – chocolate, vanilla, butterscotch, strawberry, mint, peanut butter, cookie dough – and use any toppings you want, too! Top your cake with your choice of syrup, nuts, and candies, so it’s just the way you like. The best part? It’s super easy!
Here’s how to make a delicious, homemade ice cream cake.
GG’s Homemade Ice Cream Cake
Crust
28 chocolate sandwich cookies, such as Oreos
1/3 cup unsalted butter, melted
Filling
2 cups frozen whipped topping
4 cups ice cream, softened
Toppings
Chocolate or butterscotch syrup
Chopped nuts
Chocolate chips
Mini marshmallows
Candy-coated chocolates
Mini pretzels
Directions
- Make the crust. Using a blender, crush the cookies into fine crumbs, then combine them with the melted butter in a medium bowl. Press the mixture into a 9” springform pan or deep pie dish. Set aside and allow it to cool.
- In a large bowl, mix together the ice cream and imitation whipped cream until smooth. Pour the mixture onto the crust and spread evenly. Drizzle with the syrup and cover with about 1/3 cup of the toppings of your choice. Cover the cake and put it in the freezer for 5-6 hours.
- Remove the cake from the freezer 10 minutes before serving. For easier slicing, clean your serving knife with hot water between each cut. Enjoy!
